Why Grams Are More Accurate Than Cups

Cups measure volume, not weight. One cup of flour can weigh 120–140 g depending on how tightly it's packed. Using grams with a kitchen scale gives consistent baking results. This is especially important for Nigerian chin-chin, puff puff, and cake recipes.

Standard US measuring cups (240 mL) are used in most Nigerian recipe books and baking guides. However, many Nigerian home cooks use teacups or mugs as measuring cups, which may hold 150–200 mL — significantly less. For consistent results, use a proper measuring cup set or weigh ingredients in grams on a kitchen scale.
For a typical Nigerian serving of rice, 1 cup of uncooked rice (185 g) serves 2 people as a side or 1 person as a main meal. Rice roughly doubles in volume when cooked, so 1 cup uncooked = about 2 cups cooked = about 370 g cooked. For a Nigerian party of 100 guests with rice as the main dish, plan approximately 50 cups (9.25 kg) of uncooked rice.
Palm oil (and most oils) have similar density to water — approximately 0.9 g/mL. 1 tablespoon = 15 mL × 0.9 g/mL = approximately 13.5 g. So 3 tablespoons of palm oil ≈ 40 g. For recipes, most Nigerian cooks use "standard tablespoon" (15 mL) measures for oil. A bottle of Palm oil (1 litre) weighs approximately 891 g.
